A Peep of Chickens

Good cooking impresses me. Not in some foo-foo way, but simple foods, simply prepared often taste better than anything and when you run into a good cook who makes something simple and simply - well it is a treat.  Last night was a dinner of a roasted chicken over root veggies - a one pan dish. The chicken was roasted "upside down" so the breast meat got all the drippings and was just terrific.

The entire episode made me think of Julia Child's famous "chicken show" from maybe 40 years back - before the would be "Julie and Julia" of last night was born.  I don't t think that handling raw chicken is her thing but she can sure cook it.
