Outstanding quick meal on a hot day

Leftover chicken is no fun.  This is a quick way to use it up and only requires a knife, a bowl and a sauce pan of boiling water. Takes 12 minutes.

 
  1. Boil water, add plenty of salt.
  2. add I cup of small pasta .. like small bowties or macaroni even
  3. take whatever leftover (cooked) chicken you have ... about 6 oz will be more than enough and cut it up into pieces the same size as the pasta.  
  4. Then use fresh if you have access or canned or frozen
  • 1/2 cup of diced tomatos (same size as the pasta if you are cutting up)
  • 1/2 cup of frozen peas or
  • 1/2 cup of corn or
  • 1/2 cup of black beans  OR ANYTHING ELSE LIKE THIS AND I MAKE THIS WITH ALL OF THESE VEGGIES
  • Basil if you have it and lemon juice or lemon basil if you want..lots of it..never too much
  • salt and pepper to your taste
  • some reasonable quality grated italian cheese or feta or goat even...whatever
Put all the ingredients into the bottom of the bowl. drain the cooked pasta and dump it on top while still very hot. Mix from the bottom up, don't stir, just kinda blend it.
Serve warm is best...with bread of course.  Makes about 4 servings and the ones that "age" taste even better because the basil and lemon (or lemon basil) really let their flavors go.
